Vegan Brown Stew Jackfruit
Make this Jamaican brown stew jackfruit for a vegan option. Flavorfull and healthy for a great family meal.

- Garlic
- Red onion
- Red pepper
- 5 Garlic cloves
- Thyme
- Ginger
- 2 Scallions
Seasonings
- Sea salt
- Back pepper
- Paprika
- Allspice
- Onion powder
- Garlic powder
Canned
- 2 can Jackfruit
- 1/2 teaspoon Browning
- 1 cup Vegetable stock
- Scotch bonnet pepper (optional) if want spicy
- Extra virgin olive oil optional
Instructions
- In a bowl add jackfruit and the seasonings. Then add the produce and mix well together.
- Marinate in fridge for one hour to overnight.
- Heat pan on medium heat then add a little extra virgin olive oil to the pan or another option if you want to omit is toUse water and stock gradually adding it in a little bit a t a time. To reduce oil I recommend this option. Add jackfruit and lightly brown on all sides then remove from the pan.
- In the same pan began adding all the vegetables and saute for a few minutes. Add the vegetable stock and jackfruit back to the same pan. Cover and let simmer for 15 minutes so all the flavors can come together.
Notes
This variation is healthy and you can pair it with rice and peas and other vegetables. Try some cabbage for added yumminess.
Jackfruit is a great plant based alternative to use in place of meat because the young, unripe fruits soak up flavor well and have a stringy, “meat-like” texture when cooked.
