Chickpeas and Cauliflower Curry

This vegan chickpea and cauliflower curry recipe is simple and quick to make, in as little as 30 minutes! Yummy and packed with flavor. Customize the vegetables as you like and add some layers in. Chickpeas recipe are great and versatile.

Chickpeas and Cauliflower Curry Vegan Recipe

Vegan recipe chickpeas and cauliflower curry recipe that is quick and simple to make. Loaded with nutrients and flavor. This creamy dish will be sure to delight.

Ingredients
  

  • 1 Can Coconut Milk
  • 1 Can Chickpeas Rinsed and drained
  • 1 Tbsp Extra virgin olive oil optional
  • 1 head Cauliflower
  • 1/2 Red Onion
  • 4 Garlic Cloves
  • 1/2 tsp Minced Ginger
  • 1 Red Pepper
  • 3 Carrots
  • 1 Lime Fresh juice and zest
  • Tomato paste
  • Curry
  • Allspice
  • Sea Salt optional
  • Pepper
  • Cinnamon
  • Cilantro

Instructions
 

  • In a large skillet sauté over medium heat with extra virgin olive oil or water the red onion, red pepper until tender.
  • Then add carrots, garlic, ginger, and tomato paste, and curry powder stirring often. Adding more water or oil if needed.
  • Add cauliflower, chickpeas, coconut milk, and remaining spices.
  • Stir together and let simmer on low heat so flavors can come together for 15 mins.
  • Serve over rice, quino, or another grain.

Notes

Feel free to swap out any vegetables for different ones. If you are watching your intake of oil please use water instead and slowly add it in.
