Pulled Jackfruit and Potatoes

This Vegan Jackfruit Stew recipe tastes so yummy, with onion, garlic, celery, peppers, herbs and more.

Ingredients
  

Canned

  • 1 can Jackfruit green
  • 1 Vegetable stock

Produce

  • 1 Onion
  • 3 Garlic cloves
  • 1 Lemon juice
  • 3 Carrots
  • 2 Potatoes
  • 1 Red pepper
  • Kale
  • Portobello mushrooms
  • Ginger

Spice

  • Sea salt optional
  • Black pepper
  • Tumeric
  • Garlic powder
  • Italian herbs
  • 2 Bay leaves
  • Smoked paprika
  • Crushed red pepper

Instructions
 

  • Prep and cut onion, garlic, red pepper, mushrooms, carrots, and red pepper. Heat stock pot over medium heat.
  • Add onion to the pot and sauté with water or extra virgin olive oil. You can add water slowly and mixing the onion. Then add the other vegetables and sauté for a few more minutes until vegetables have softened. Then add the garlic.
  • Add the spices into the vegetable mix.
  • Add the stock and jackfruit. Turn the heat down to a simmer for about 30 minutes. After 30 minutes shred or smash the jackfruit with a fork or potato smasher.
  • Add the potatoes to the stew and simmer for 30 more minutes. For thicker stew add flax seed blend or arrowroot.

The nutrients in jackfruit may help lower your risk for some health issues, including:
 Jackfruit is a good source of fiber, so it could help you feel fuller for longer.
 Your body digests and absorbs jackfruit more slowly than some other foods. That means your blood sugar  won’t rise as quickly as it might when you eat other fruits. One study found that jackfruit extract made it easier for people with diabetes to control their blood sugar.
While a jackfruit allergy is rare, you’re at higher risk if you have a birch pollen allergy. This means that you have an itchy mouth or swollen lips when you eat other foods in this group such as apples, almonds, carrots, celery, cherries, and hazelnuts.
