Pulled Jackfruit and Potatoes

- 1 can Jackfruit green
- 1 Vegetable stock
Produce
- 1 Onion
- 3 Garlic cloves
- 1 Lemon juice
- 3 Carrots
- 2 Potatoes
- 1 Red pepper
- Kale
- Portobello mushrooms
- Ginger
Spice
- Sea salt optional
- Black pepper
- Tumeric
- Garlic powder
- Italian herbs
- 2 Bay leaves
- Smoked paprika
- Crushed red pepper
Prep and cut onion, garlic, red pepper, mushrooms, carrots, and red pepper. Heat stock pot over medium heat.
Add onion to the pot and sauté with water or extra virgin olive oil. You can add water slowly and mixing the onion. Then add the other vegetables and sauté for a few more minutes until vegetables have softened. Then add the garlic.
Add the spices into the vegetable mix.
Add the stock and jackfruit. Turn the heat down to a simmer for about 30 minutes. After 30 minutes shred or smash the jackfruit with a fork or potato smasher.
Add the potatoes to the stew and simmer for 30 more minutes. For thicker stew add flax seed blend or arrowroot.
