Prepare and chop your vegetables
Preheat saute pan with extra virgin olive oil
Add the onion and ginger and saute for 3 minutes
Add the cabbage, carrots, and garlic and cook down for a few minutes. Then add the rest of the ingredients except the egg roll wrappers. Cook down a little more.
Remove from heat and let set for 10 minutes.
Lay your egg roll wrapper on a cutting board and take spoonful of cabbage mixture and place in the center of the wrapper. Wet the outside of the wrapper with water fold down to seal. Apply more water if needed. Repeat as needed to fill other egg rolls.
Preheat the air fryer for 5 minutes at 350.
Add egg rolls in layer seam side down and lightly spray will cooking spray if desired.
Air fry for 20 minutes or until crispy flipping half way through.
