This Vegan Jackfruit Stew recipe tastes so yummy, with onion, garlic, celery, peppers, herbs and more.

Ingredients
  

Canned

  • 1 can Jackfruit green
  • 1 Vegetable stock

Produce

  • 1 Onion
  • 3 Garlic cloves
  • 1 Lemon juice
  • 3 Carrots
  • 2 Potatoes
  • 1 Red pepper
  • Kale
  • Portobello mushrooms
  • Ginger

Spice

  • Sea salt optional
  • Black pepper
  • Tumeric
  • Garlic powder
  • Italian herbs
  • 2 Bay leaves
  • Smoked paprika
  • Crushed red pepper

Instructions
 

  • Prep and cut onion, garlic, red pepper, mushrooms, carrots, and red pepper. Heat stock pot over medium heat.
  • Add onion to the pot and sauté with water or extra virgin olive oil. You can add water slowly and mixing the onion. Then add the other vegetables and sauté for a few more minutes until vegetables have softened. Then add the garlic.
  • Add the spices into the vegetable mix.
  • Add the stock and jackfruit. Turn the heat down to a simmer for about 30 minutes. After 30 minutes shred or smash the jackfruit with a fork or potato smasher.
  • Add the potatoes to the stew and simmer for 30 more minutes. For thicker stew add flax seed blend or arrowroot.

The nutrients in jackfruit may help lower your risk for some health issues, including:
 Jackfruit is a good source of fiber, so it could help you feel fuller for longer.
 Your body digests and absorbs jackfruit more slowly than some other foods. That means your blood sugar  won’t rise as quickly as it might when you eat other fruits. One study found that jackfruit extract made it easier for people with diabetes to control their blood sugar.
While a jackfruit allergy is rare, you’re at higher risk if you have a birch pollen allergy. This means that you have an itchy mouth or swollen lips when you eat other foods in this group such as apples, almonds, carrots, celery, cherries, and hazelnuts.

Ingredients
  

Canned

  • 2 Cans Chickpeas
  • Almond flour

Produce

  • 6 Garlic cloves
  • 1 Red onion
  • 2 Fresh lemon juice from lemons

Seasoning

  • Sea Salt optional or very little
  • Sunshine seasoning Tabitha Brown
  • Smoke paprika
  • Garlic powder
  • Cumin
  • Tumeric
  • Cilantro fresh if possible
  • Parsley fresh if possible
  • Nutritional yeast

Instructions
 

  • Add drained and dry chickpeas, onion, and garlic to food processor
    2 Cans Chickpeas, 1 Red onion, 6 Garlic cloves
  • Chop for about 30 secs
  • Add remaining ingredients except flour. Season to taste.
    2 Fresh lemon juice from lemons, Sea Salt, Sunshine seasoning, Smoke paprika, Garlic powder, Cumin, Tumeric, Parsley, Nutritional yeast, Cilantro
  • Chop and bend ingredients together until smooth
  • Add almond flour and mix to hold falafel together
  • Make into little balls and prep for fridge or freezer. Put in freezer for 10 minutes or fridge for 20 minutes to let falafel get firm.
  • Preheat air fryer for 5 minutes at 350 degrees
  • Add falafel balls and cook for 15-20 minutes depending on your air fryer. Flipping them half way to cook evenly

  • 1 Chickpeas
  • 2 Cups Vegetable Stock or other stock

Produce

  • 2 Lemons
  • 1/2 Red Onion
  • 4 Garlic Cloves
  • Ginger
  • 1 Red Pepper
  • 1 Zucchini
  • 1 lb Green Beans

Seasonings

  • to taste Sea Salt can omit
  • Black pepper
  • Turmeric
  • Olive Oil extra virgin
  • Tamari
  • Rice Vinegar
  • Basil
  • Thyme
  • Marjoram
  • Parsley

Grains

  • 1 Cup Quinoa

Instructions
 

  • Prep and cut string beans, garlic, onion, zucchini, red pepper, ginger, and lemons. Cut the onion, zucchini, red pepper, and garlic into small cubes. Rinse and drain chickpeas. Juice fresh lemons and set aside.
  • Warm up sauté pan over medium heat with a little bit of extra virgin olive oil, or omit and gradually use water adding in slowly.

  • Add onion, red pepper, and dry spices. Saute for a few minutes then add in zucchini, chickpeas, and string beans. Add in Tamari and rice vinegar Cook for 10 mins until tender, stirring occasionally.
    1 Chickpeas, 1/2 Red Onion, 1 Red Pepper, 1 Zucchini, 1 lb Green Beans, to taste Sea Salt, Black pepper, Tamari, Rice Vinegar, Turmeric
  • Add in lemon juice, herbs, ginger and garlic stirring to mix in flavor. Lower heat to low – medium and let flavors blend together for another 5-10 minutes.
    2 Lemons, 4 Garlic Cloves, Ginger, Basil, Thyme, Parsley, Marjoram
  • Serve with quinoa.
    1 Cup Quinoa, 2 Cups Vegetable Stock

Notes

Seasoning is to taste and done with love. Measurements are always general in term when it comes to spices. Find what works with your pallet. 
You can also swap out vegetables for what you have on hand as this is a versatile dish and  healthy as well being packed with nutrients.
The fiber is also good for gut health and will keep you full longer.
