Creamy Coconut Milk with Vegetables

Try this home made version of Thai coconut dish that will have your taste buds happy. Simple and fast to make while still giving you nutritious goodness. Use your vegetables of choice or add in other items to your liking.

Ingredients
  

Produce

  • 1 Medium Bok choy
  • 1 Yellow onion
  • 1 Mixture vegetable medly
  • 5 Garlic cloves
  • 2 Lemon zest
  • 2 Limes and lime zest
  • Ginger

Seasoning

  • Sea salt optional
  • White pepper
  • Chili pepper
  • Garlic powder
  • Coriander
  • Cumin
  • Tumeric
  • Sumac
  • Cilantro

Canned

  • 1 Jar Roasted red bell peppers
  • 2 Tbsp Peanut butter
  • 1 Can Coconut milk

Instructions
 

  • In a food processor or blender combine red bell peppers, onion, garlic, fresh lime juice and zest, lemon zest, ginger, and spices. Process until smooth and blended together.
    1 Yellow onion, 5 Garlic cloves, 2 Lemon zest, 2 Limes and lime zest, Ginger, Sea salt, White pepper, Chili pepper, Garlic powder, Coriander, Cumin, Sumac, 1 Jar Roasted red bell peppers, Tumeric
  • Transfer sauce to a saute pan and bring to a boil over medium heat. Cover and simmer for 10 minutes.
  • Stir in peanut butter and cook for 1 minute.
  • Add in coconut milk and vegetables. Cut bok choy lengthwise into pieces and into sauce. Bring to boil
  • Reduce heat and simmer uncovered 15 minutes or until vegetables are tender. Add in cilantro when finished.
  • Serve over brown rice or other grain

Notes

Bok choy, a cruciferous green vegetable, along with being crunchy and delicious, bok choy is full of fiber, vitamins, minerals, and other nutrients that make it a beneficial addition to your diet.
Like other dark, leafy greens, it’s full of antioxidants and other compounds that help to promote better health. It can even fight inflammation and reduce of heart disease.
Try this yummy recipe and add other vegetables that are your favorite.
Cook with love and add seasoning to taste.
